Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Founded by Sarah Eliott and Mark Weldon, Terra Sancta is a New Zealand winery, located in the Central Otago region and renowned for its excellent organic Pinot Noir wines. The grapes are selected and harvested from the Slapjack vineyard, located on a sunny slope 250 meters above sea level and planted in 1991 with a blend of 13 clones. The vines, grown organically using a regenerative approach, are ungrafted, on gravelly glacial shale soils with a surface layer of clay, and enjoy a northerly exposure. The grapes are hand-harvested early to ensure good acidity in the wine. After spontaneous fermentation with indigenous yeasts, the wine ages in oak barrels (80% used) for one year before bottling without fining or filtration. The result is a powerful and expressive wine that reveals an intense and broad aromatic profile on the nose with notes of pomegranate, raspberry, and black cherry, followed by notes of Mediterranean herbs, licorice, and hints of citrus zest. On the palate, it's soft, rich, and smooth, with excellent complexity of flavors and a distinctive minerality. It has silky tannins and a refreshing acidity. The finish is long and elegant, with hints of minerality amidst the fruity notes. Try it with duck breast or herb-roasted guinea fowl.
