Located in Tuscany, in the Castellina in Chianti village, Castello di Fonterutoli is the main estate. Here, production focuses on high-quality wines and olive oil, with a state-of-the-art cellar and olive oil mill, where all operations are managed using modern software to ensure the highest quality. Fonterutoli olive oil is produced from the indigenous Frantoio, Leccino, Moraiolo, and Pendolino cultivars, grown at altitudes between 400 and 600 meters above sea level within the Chianti Classico DOP appellation. After manual harvesting, transfer to the mill, defoliation, and washing, the olives are pressed in the absence of oxygen to ensure the preservation of their aromas and natural properties. The oil is then extracted using a centrifugal decanter at a controlled temperature and finally filtered. The result is an extra virgin olive oil with excellent organoleptic and nutritional properties, revealing an intense and distinctive aromatic profile with vegetal and artichoke notes. On the palate, it is rich and elegant, flavorful and supple, with a slightly spicy finish, typical of Tuscan oils. Try it on tasty winter soups like ribollita or on grilled meat.
