Located in Istria, in the northern part of the peninsula, in the small village of Krasica, near the border with Slovenia and Italy, Clai has been producing organic wine and olive oil for 25 years on its 15 hectares of land (10 hectares of vineyards and 5 hectares of olive groves). Here, the plants benefit from unique climatic and soil conditions, with excellent exposure, sea breezes from the Adriatic, and calcareous flysch soil. The Terrebianche oil is a blend of five local and two international varieties, hand-picked from the company's 1,500 olive trees, located 200 meters above sea level. After harvesting, the olives are pressed the same day to maximize their exceptional organoleptic and nutritional characteristics and obtain a fresh and balanced oil. The result is an organic extra virgin olive oil of extraordinary quality, recognized for several years at the New York Extra Virgin Olive Oil Competition. To the eye, the oil reveals a beautiful, intense, clear golden yellow color with delicate greenish hues. Its aromatic profile alternates spicy notes with hints of orange peel, artichoke, chicory, and almond. On the palate, it is fresh and lean, smooth and flavorful with a light bitter aftertaste. It is a very versatile oil: it pairs well with vegetables, fish, grilled meat, and rich legume soups.
